A good bagel truly is a labor of love – it takes the average person a little under ten minutes to devour something that has taken 24 painstaking hours of care and attention to create. But not all bagels are created equal. Get a poor one, and it’ll ruin your morning in a fashion not too dissimilar to being served up a baked coffee at your once favourite café. Get a good one, and it’s smiles all around. Cactus Eatrip doesn’t simply make good bagels, they make great bagels. These are the kind that will literally stop you in your tracks as they melt in your mouth.
Ryuta Katsumi comes from a long lineage of bakers. It was probably no surprise to his family when he opened the doors to Cactus Eatrip eight years ago, however since then it’s (understandably) become somewhat of an institution in Okinawa. I spent an afternoon watching him in the kitchen and it’s pretty obvious this man doesn’t take shortcuts. The word ‘meticulous’ springs to mind.
There’s a vast selection of bagels and fillings on offer, so be sure to take your appetite along. I had an everything bagel with smoked salmon, capers and cream cheese. It’s a staple and you won’t be disappointed. Those with a sweeter tooth can opt for something like the Oreo bagel with blueberry cream cheese (it tastes just as good as it looks).
